Why weighing beats cups in baking
A cup can be packed, levelled or aerated, and for flour that alone moves the weight by 20 to 30 g out of 125. Recipes fail on that margin: a dense cake or a runny batter is very often a measuring problem, not a skill problem. American recipes stay usable anywhere once you convert them to grams a single time, and a digital scale repeats the exact same cake order after order, which matters as soon as you bake to sell.

- One ounce is 28.35 g. So 4 oz is about 113 g, 8 oz is about 227 g and 16 oz (1 lb) is 453.6 g.
- How much does 1 cup of flour weigh?
- About 125 g for all-purpose flour, spooned into the cup and levelled. Packing the cup can push the same volume past 150 g, which is exactly why weighing is safer.
- How much does 1 cup of sugar or butter weigh?
- White sugar: about 200 g per cup. Butter: about 227 g per cup, which is also two US sticks of 113 g each.
- What temperature is thermostat 6?
- Thermostat 6 is 180 C conventional (356 F), or about 160 C in a fan oven. Each thermostat mark equals 30 C.
- What does 180 degrees fan mean in a conventional oven?
- A fan oven runs about 20 degrees hotter than a conventional one at the same setting. If a recipe says 180 C fan, set a conventional oven to about 200 C. If it says 180 C conventional, set the fan oven to 160 C.
- Why does 1 cup weigh a different number of grams per ingredient?
- A cup measures volume, not weight, and ingredients have different densities. The same 240 ml holds about 125 g of flour, 200 g of sugar or 340 g of honey. That is why this converter asks for the ingredient first.
